Gingerbread: Gingerbread Men

Ingredients:

Ginger Bread Men

for 10 ginger bread men

  • 340 g flour
  • 6 gr Bicarbonate of Soda
  • 5 gr powdered gingerr
  • 110 gr salty butter, room temperature
  • 170 g brown soft sugar
  • 1 beaten egg
  • 70 gr Golden Syrup
  • a few currants and glacè cherries

Procedure:

Preheat the oven to 375° F Grease a baking sheet

Sift the flour and the bicarbonate of soda in a mixing bowl then add the powdered ginger and mix well

Cut the butter into small pieces and rub into the mixture to a consistency of fine breadcrumbs, then add the sugar and mix well. In another bowl mix the beaten egg and the golden syrup using a fork.

Add the mixture to the flour and butter and mix until it becomes a soft dough. On a floured surface roll out the dough to the thickness of a penny, then cut out shapes of men with a knife or a pastry cutter, saving and re-rolling the uncut bits.

Put each biscuit onto the greased baking sheet and decorate by pressing the currants into place for the eyes and buttons and the cherries for the mouth.

Bake in the oven for approximately 6-8 minutes depending on the size of the biscuits

When they are ready, leave them on the baking sheet for a few minutes, then transfer them with a spatula to a cooling rack, and leave to cool completely

Decorations:

To decorate the Ginger Bread, you can prepare white or colored royal icing and use a piping bag with a fine tip.

Here's how to prepare the royal icing:

For 150 g of icing sugar, use 30 g of egg whites. Whip the egg whites and when they are well whipped, slowly add the icing sugar and a few drops of food coloring. Insert the icing into the piping bag and voilà! Ready to decorate your Ginger Bread Men, and why not women!
