The recipe

Cooking time: 14 minutes

Cooking temperature: 160 ° C

Ingredients

16 grams of Earl Gray Tea

100 grams of granulated sugar

800 grams of salted butter at 12 ° C (or unsalted butter with the addition of 6 grams of salt)

400 grams of powdered sugar

Salt to taste.

80 grams of egg yolks (about 5 fresh or pasteurized egg yolks)

1,200 grams of 00 weak flour

For finishing

(to be prepared only at the time of cooking)

55 grams of whole eggs

Granulated sugar to taste

Procedure:

Blend the granulated sugar and the tea leaves.

Sift everything to remove any leaves that fail to pulverize.

Then mix in the mixer with the butter, sugar, salt and tea for about 4 minutes until the mass begins to whip and incorporate air.

Lower the speed of the planetary mixer and add the eggs and then sprinkle the remaining ingredients and knead for about a minute or until the dough is homogeneous (during processing the dough may take on a coarse sandy appearance).

Divide the dough into equal parts, form rolls of about 4 cm in diameter and, after placing them on a tray lined with parchment paper, cover them with a second tray and wrap the package with cling film, let it rest in the fridge for at least 12 hours. .

The final touch

Before cutting the biscuits, brush the outer surface with egg and then sprinkle with granulated sugar.

Wait for the dough to reach room temperature (about 20 ° C) after removing it from the refrigerator.

Place the rolls of dough on a cutting board and cut into discs about 2 centimeters thick.

Taking care to put the cut part (therefore the flat part) in contact with the pan, place them on a baking sheet lined with parchment paper and put them in the oven.
