Who among you does not know the Ginger Bread Men? These very famous little man-shaped, ginger-rich cookies are the quintessential Anglo-Saxon Christmas, along with Christmas Cakes and Christmas Pudding.
Everyone, from the youngest to the oldest, loves these ginger cookies! And the reason is simple.
In fact, in addition to being very tasty, Ginger Breads are super easy to make and super fun to decorate. A nice way to give space for creativity, even of our children. Colorful buttons, bow ties, big eyes and smiles that go from side to side. Your choice!

Here is our recipe!
Ingredients: for 10 ginger bread men
- 340 g flour
- 1 teaspoon baking soda
- 2 ½ teaspoons ginger powder
- 110 gr butter
- 170 gr brown sugar
- 1 beaten egg
- 4 tablespoons Golden Syrup
- a pinch of salt
- a handful of raisins and candied cherries
Tools needed:
- 2 bowls
- wooden spoon
- large sieve or strainer
- fork
- knife
- rolling pin
- mold in the shape of a small man or sharp knife
- baking tray
- baking paper
- spatula
- grate
Procedure:
Preheat the oven to 190° C; Sift the flour and baking soda into a bowl and mix them together with the ginger . Cut the butter into small pieces and add it to the flour. Using your hands, work the flour and butter together by rubbing them together until you get a dough similar to breadcrumbs. Add the sugar and mix well. In another bowl, beat the egg with a fork, mix it with the Golden Syrup and add it to the mixture, stirring until smooth. With a rolling pin, on a floured surface roll out the dough 2 mm high, and with a small shape or knife cut out little men, reusing the leftover dough from time to time. Arrange the little men on a buttered baking sheet or covered with baking paper, decorate them by inserting and lightly pressing raisins in place of the eyes and buttons and candied cherries in place of the mouth.
Bake for 10 to 15 minutes depending on the size of the cookies. When they are ready let them sit for a few minutes before placing them with a spatula on a wire rack to cool
Decorations:
To decorate the Ginger Breads, you can make white or colored royal icing and use a sac à poche with a fine tip.
Here is how to make royal icing:
For 150 g of powdered sugar, use 30 g of egg whites. Whip the egg whites, and when they are well whipped, slowly add the powdered sugar and a few drops of food coloring. Place the icing in the sac à poche et voila! Ready to decorate your Ginger Bread Men, and why not women!
